SAMBAL SARDINE
Sambal sardine is preserved sardine in tomato sauce cooked with a Malay twist. It is one of the few dishes that I learnt from my grandma when I first started cooking. 


Ingredient
What/how to do

Chilli paste
Boil 1 handful of dried chilli, tossed and blend it with 2 red onion.

Chilli paste / cili kisar
Onion
Sliced
Garlic
Smashed
Green Chilli
Sliced
Chilli padi
 Optional

Tamarind juice

 1 tbs of tamarind to 1/2 cup of water
Sardine
I prefer the Ayam Brand

Fish cube / salt


Oil
For frying



How to:
Heat wok and start frying the blended chilli till it’s fragrant and reduced. Add in onion, garlic, chilli, curry leaves till fragrant. Pour in sardine and tamarind juice. Add in fish cube / salt for taste. Let it simmer for about 15 mins and its ready to eat! Best eaten with plain white rice or bread.
