Savourydiary | Thai Steamed Fish



In this cold, damped weather. It's nice to be slurping in the soury-spicy gravy of the Thai Steamed Fish.
The delicious and aromatic fragrant of the ingredients is so appetizing! It will make you have a second serving!
Get the freshest ingredient possible. I chose mine at Sheng Siong Supermarket.
The fishes are still swimming in the tank kind of fresh! 
Best is, if you could actually catch a fish while fishing. *heart eyes* 
Its so so so fresh the fish absorbs the flavors so well.

What to do?
In a medium pan, heat oil.
Saute minced garlic, fresh young ginger, onion.
Till it changes color and starts to fragrant.
Add tamarind juice, fish sauce, plum sauce and water for the gravy.
Let it boil and thickens a little.
Pour over a whole seabass. (BEST CHOICE of fish is sea bass)
Slice lemons, lemongrass, tomato, chilli padi , corriander leaves.
Put it in the steamer and let it steam till the fish is cooked. 
Best served with plain white rice and a side of omelette.

It's all about macaroni today!
What you need?
Butter or olive oil to saute the minced garlic.
For me personally, I love the taste of butter so much.
I'd use extra. Hehe.
Chopped some chili padi.
Diced some onions if you like.
Chicken cube.
Sliced fishballs.
Add all in the pan.
Keep stirring them under medium heat.
And pour in your macaroni.
Season to taste. 

For the Beef strips,
Store bought marinated beef from Coldstorage.
Cooked in medium heat in a bit of butter.

For the sauce,
Bottled black pepper sauce,
oyster sauce
salt 
pepper
BBQ sauce.

And....no, I didn't spell it wrong.
That's how we've been pronouncing it. Ma-cro-ni.
HAHAHHAHA.

It's a wet weather here in Singapore.
Been raining the entire evening yesterday.
Decided to whip up this dish after being stranded for 3 hours due to the bad weather.

As soon as i reached home, had my macaroni boiled.
Fry the chilli paste till dry and fragrant.
Everyone started sneezing and we all thought it was due to the cold weather. 
But, relax, its just the chilli. hehehe.

Add in Chilli sauce, tomato sauce and oyster sauce.
Just a heads up, season your food as you go.

Keep the chilli paste frying.
It will start to reduced.

Add in chicken cube if needed.
Sugar to taste.

Your meaty ingredients and don't forget your green vegies! :)
Fishball,crabstick, fishcake and hotdogs goes very well with this.

Aaaaaaaaaaaaaaaaaand,
I realise, I don't give you measurements do I?
It's because I don't really measure my ingredients.
Follow your heart and your unique sense of taste.

Remember my previous post on Ngoh Hiang?
Yesterday, I decided to, "let's try this out."
This isn't the original/authentic recipe to follow but it taste as good.
We had so much fun making this. 
By we, I meant I asked my partner for help. 
Help in the most tedious step : rolling the Ngoh Hiang. 
HAHAHAHA.
So ladies, ask your kid to "play around" the kitchen and asked them to help you out. 
I'm sure they will have as much fun as you're eating the end product.
hehe *winks*

In a bowl, mix :
 Minced chicken and prawn,
Salt and pepper,
Diced carrots(originally used water chestnut) and onions,
and the KEY INGREDIENT : CHINESE FIVE SPICE
an egg and a bit of flour
roll em' in popiah skin ( originally used beancurd skin )

and FRY THEM! 
Dip in Dark Sweet Soy Sauce.

YUUUUUUUUUU-MMMEEEEEEY!
It's CRISPY and full of distinctive flavors.

Savourydiary | Tulang Masak Merah

What's for Lunch today?
Tulang masak merah!
It is bonesteak cooked in chilli.

Usually, when you are in Singapore, you will enjoy this dish at Beach Road.
Where there's many Indian-Muslim stalls that sells this.
But, today I'm sharing with you the Malay style of cooking Tulang Masak Merah.
Which has lesser food coloring.

First thing first.
Boil em' bonesteak in big pot of hot water.
This process, will take about an hour or more. 
(The amount of patience you need for this dish. Advisable not to cook it when you're feeling faint of hunger. HAHHAHAHAHA)

While boiling,
Fry the chilli paste till fragrant and reduced.
Add in tomato sauce / tomato puree ( following what you have in your kitchen )
Chilli sauce
Salt / Beef cube
Sugar
Thick slices of ginger
Put in the bonesteak and few cups of water and let it boil.
Let the bonesteak absorb all the ingredients.

Andddddddd,
YOU'RE READY TO EAT!
Best served with french loaf or any bread you have.

Savourydiary | Nasi Lemak

#Savourydiary | Nasi Lemak

Nasi Lemak is a Malay fragrant rice dish cooked in coconut milk and pandan leaves.
Often served for breakfast in many stores but to many Malays here in Singapore.
It's a rice dish. It's eaten anytime! :)

To cook the rice, just remember this ratio. 1:1.5, 2:2.5, 3:3.5. 
Well, that is the rule of thumb for me. 
For rice more than 3 cups, I've not tried yet. hehe.

For the Nasi Lemak:
Add 3 cups of rice to 3.5 cups of liquid.
In which, 1 box of coconut milk + the remaining amount to fill the liquid.
You get me yeah?
Pandan Leaves
3tsp of salt
1 x Star anise
1 x cinnamon
2 x bay leaves

Trust me, when it starts to steam, wow! It will make you hungry.

For the Chicken:
The basic, most authentic recipe yet so simple.
I guess, most Malay homes have used this recipe.
Simply mix turmeric power with salt.
And deep fry em' chicken.
(oh, this works for fishes too)

For the Sambal:
Fry Chilli paste with belacan (shrimp paste)
Add sliced onion(optional)
Sugar, salt and a bit of tamarind juice. 

Side Dishes:
Normally, eggs, anchovies and cucumber.

But, let me show you what this simple dish is all about!


Fry some instant nuggets, seaweed chicken, of left overs hard boil eggs. 
This dish is so versatile, if you're soooooooooooo erm, *cough* lazy *cough*
Eat the rice with omelette.

Another version of ayam lemak today!
Spicy Chicken in Coconut Gravy.

What I did?
Blend garlic, onion, chilli / chilli padi, ginger, lemongrass and turmeric in oil.
Pan fry till its fragrant and dry.
Add in pieces of chicken.
Let it simmer for awhile.
Pour in a box of coconut milk and 1 box of water.
Add in 2 chicken cube. 
Slice some potatoes, tomatoes, chilies/capsicum and yellow onion.
Let it boil and soften and you're ready to eat.

Sharing with you another fried rice recipe!
Blend some garlic with chilli ( normal red chilli will do. Additional Chilli padi for extra spicy.)
and some belacan (shrimp paste)
Oh yeah, fry some anchovies till crispy and set aside. 
Fry the blended ingredients till fragrant.
Add in sliced onion.
Eggs.
Today, I'm using spinach usually its Kang Kong ( water Spinach ).
Add your rice and salt or fish cube for taste.
I prefer cooking in cube than using salt.
Personal preference yeah?
Now, fry your perfect gooey sunny side up, sprinkle crispy fried anchovices.
And, you're ready to eat!

Ngo Hiang is like the Chinese version of sausage I guess.
It's a mixture of chicken meat and shrimp with Chinese 5 spices which is rolled in dried bean curd skin.

The first time trying this was when i'm 14!
During home economics classes which one of my Chinese friend cooked for her practical. 
It was so nice, I keep wondering what she cooked.

Till recently, i found that it is Ngo Hiang.

Usually I eat the instant Ngo Hiang which is filled with too much flour. (not that nice)
Just like instant sausages, less meat more flour. Yucks!

Then, I found this gem nearby my school. 
Which I got hooked. 
And best is it is HALAL!

It's filled with so much meat and beautifully flavored.
It is best eaten dipped in the sweet dark soya sauce.

Try them! No regrets!

Date night Thursday! 
He's craving for some ice cream while I'm craving for waffles.
Wondering where to indulge our cravings and decided,
"let's try The Daily Scoop Ice Cream Cafe."

The outlet was quiet and not much patrons. 
So it was quite relaxing for us.

We tried Simply Chocolate and Strawberry Shortcake which was thumbs up! 
Had a taste of Chendol Ice Cream and surprised why no one raves about it. 
Maybe cause it's not soft served? but anyway, it was good! It really taste of chendol and the gula melaka taste was game on!

Before we left, we bought a junior scoop of Salted Mr Brown which cost only $2.50.
It has sea salt, brown sugar anddddd to me it just taste like Salted Caramel with a twist. 
For those who don't like sweet ice creams, try their Salted Mr Brown.

Remember my previous post on Sambal Sardine? 
You can try cooking Celok Bendih as goes very well with Sambal Sardine and plain warm jasmine rice. 

Celok Bendih is a dish consist of lady's finger in sweet,sour and spicy soup. 
I can say, this dish is a #healthydish. 
As there is no oil involve in cooking.

Happy trying and tell me how you like it! 

What you need?
Chilli Paste - soften dried chilli blend with onion
Tamarind Juice
Fish cube / Salt - whichever following your preference
Sugar
Lady's Finger
Water

What to do? 
Simply boil water, tamarind juice and chilli paste.
Add your salty and sweet flavorings.
Once boil, put in the Lady's Finger in however you liked it. 
Note : Do not slice too thin as it will go all mushy.

Well can i say this is a 2 ingredient dish?

#Savourydiary | Nasi Goreng Chilli Padi *spicy level: Extremist!*

This was once well requested by my friends.

Who kept asking me,"Babe, when are you cooking your nasi goreng pedas nak mampus?"
So I'll whip up this dish for my lovely friends.
Nasi Goreng is simply Fried Rice in Malay.
With the same concept, there are many varieties of Nasi Goreng.


What I did?
Usually, while I'm cooking the rice, I'll be in the shower.
Rice takes a good 30mins to cook or is it more? hmmm.
Well, just multi-task. So the time goes by faster. hehe.

How I do it?
I took some garlic, by some i mean about 6? 
Together with 10-20 chilli padi. (SAY WHOAT? or more, or did I actually poured in 1 packet of Chilli Padi in the blender. AHHAHAHAH.)

Anchovies

And i started grinding them, well in the blender! hehe. 


I heat my wok with 2-4 tblspn of cooking oil and start frying all the ingredients.
Once you start sneezing (due to the super spiciness of the chilli),
pour in 1-2 eggs and fish cube for taste. 
Mix well and then fry in the rice.
Let it cook awhile longer with continuous stirring so you don't burn your rice.

Ready to serve! 
Along with sunny side up. 
Makes me crave this Nasi Goreng right now.

Let's enjoy some fruit tarts for tea break! 

Savourydiary | Aglio Olio with Zucchini

To create this dish you need to saute chopped garlic in butter till the fragrant.
Add in prawn its sweetness.
Chopped chilli for some spice , sliced portabello mushroom,
A cube of chicken stock and pasta.
Mix well and pour in your zucchinis.
A tinge of oregano just before serving.
WALLAAAAAAA~ enjoy.

Smash the garlic

sliced some onions


add in some red chilli
for the one who loves spicy, add in some red chilli padi



an inch of turmeric
some sliced ginger



saute all the ingredients in a bit of oil. add in tamarind juice. for taste, add in some salt or I'll use fish cube. add in fish, best with tuna or what I used today is threadfin bream (ikan kerisi). let the soup boil and its ready to eat! :)

Simplest way to make brekkie! :)

My friend from Aussie brought some beef sausage and it was sooooo goood! 
I heat up my pan on medium heat and started frying my sausage.

The juicy fats from the sausage will start filling up the pan. 
The juice was then used to fry the scrambled eggs. 
And this is ready to be served! How delicious and simple this recipe can be.

AYAM MASAK KICAP

Chicken cooked in soya sauce.

When I was a kid, this was my favourite dish. It taste sweet and a bit of spicy. Usually when my mom cooks this dish, she will make it more watery and add in vermicelli. She will cook this in slow cooker so our chicken absorbs all the flavours. But as for me, whatever cooks the fastest yes? Hehe.

Step-by-step

Fry all sliced ingredients in hot wok till fragrant. Add in chicken till ¾ cooked and pour in soya sauce and oyster sauce for taste. Add a bit of water and let it simmer.

Savourydiary | 3 Dish : Asam pedas , Ikan masin , Telur dadar

Asam Pedas Ikan Pari
Blend chilli paste, garlic, ginger and turmeric.
Fry in hot oil and add in smashed lemongrass bulb.
Let it fragrant.
Pour in tamarind juice and water.
Add in fish cube for taste or belachan for the extra ommph!
Lastly, don’t forget your stingray!
Let it simmer and it’s good to go.

Ikan Tenggiri Masin Goreng
In hot oil, fry the ikan tenggiri masin till crispy.
Place the fried fish on a plate.
Sliced some garlic, cili padi and lots of onion and fry in the same oil.
Pour mixture on top of the fish.
And for the additional zest, squeeze few limes to serve.
Omelette
Beat some eggs, white pepper and salt.
Fry in hot oil.
Add some fried shallots for garnishing.


Best served with plain white rice.
Enjoy your meal with your love ones!
