Savourydiary | Halal Oyster Fried Eggs


Hi Savouries!

Today, I will be sharing with you a recipe that is well liked by us locals. This is not malay food okay? This is Chinese food. 

In Singapore, most of the oyster fried eggs are sold by Chinese which means, it is not halal. So today, I will share with you Halal oyster fried egg recipe. So you can cook it at the own comfort of your house. hehe.

Everytime I walked pass their stall, I will salivate (air liur meleleh babe). The aroma is enough to make you hungry. Batal tak puasa kite kalau tertelan air liur pasal sedap sangat bau nyer. hehehe.

Don't you feel the same way as me? Why do Chinese food always always smells so nice and tempting!

I have always looked out for halal Chinese stalls that sells oyster fried eggs but I will always go back to Northpoint basement, (Local Delights if I am not mistaken) for their oyster fried eggs. 

What I can say about Northpoint's oyster fried egg is that. The taste is complete. The flour parts are made crispy on the side with plenty of eggs and the chilli is thick, sour and sweet which is nicely paired with the oysters. ( Yknw how you eat fresh oyster with tabasco or lemons, its for that soury taste. )

I have tried other stalls that sells oyster fried eggs too. Its either, there is too much flour, tasteless, or the chilli is simply too watery and too sour. Not to my liking. 

But well, what do I know about oyster fried eggs since I have never tried the authentic ones ( with rice wine, lard and whatnot ). If there is any Chinese readers here who could enlightened me by describing the taste of the authentic fried oyster, do inform me ok?



INGREDIENTS

2 tbs cornflour
2 tbs rice flour
8 tbs water
1 tbs cooking oil
a bit of of white pepper

1 tbs light soy sauce
3 to 4 eggs
10 oysters
spring onions for garnish



What to do?

Mix corn flour, rice flour, oil , water and pepper in a bowl.
Heat a non stick pan with abit of cooking oil.
Once it is heated, pour in the flour mixture portion by portion and cook it till its crispy.
Pour in the eggs and let it cook. Just like how you fry an omelette. 
Pour in the soy sauce for flavour.
And let the mixture turns golden.
Once done, make a hole in the centre and put in your oysters. 
A drizzle of light soy sauce or a pinch of salt.
Mix all together and it is ready!

Cut in small pieces of spring onions to enhance its taste! 


For the chilli, I'm unsure how to get the texture and taste just like the Northpoint one. But what I did was,

I blend some red chilli with vinegar, sugar and water. Which I then, cooked it on medium heat. Not so fantastic, but if you are not those picky ones, even eating with chilli sauce is ok. hahahahah!
