I usually buy Sadia Chicken from Sheng Siong supermarket as it
is smaller and feeds perfectly for my family of 4.
For this recipe, I prefer using red onion but if
you’re left with the other kind, I guess it won’t make much of a difference.

Old ginger gives off a stronger taste but young ginger will do the work too.
Just add in more. By more, I meant by 2cm and not double the amount ok?
Chicken cube usually using Knorr brand.

While defrosting your chicken, prepare all the other
ingredients.
Like taking out your pot and heating it in medium to low heat. As for me, I
personally love to use rice cooker to cook this dish.
Then start grinding / blending, peeling and cutting all the other ingredients.
Start frying the onions, garlic and ginger in oil (about 5 table
spoon) on medium heat.
Once you smell the fragrance filling up the kitchen, place in the chicken
together with the chicken cube. Let the chicken be ¾ cook.
Pour in water roughly a little more till it covers the chicken and add a bit of
salt and white pepper. Leave it and let it boil away. (That’s why I like using
rice cooker for this.)
While waiting to boil, clean your kitchen. Multi task ok? Take a quick shower
or do your laundry.
Once boil, remove 3 cups of broth/soup in another bowl. (this is for the
following recipe)
Add in potatoes and carrots till soften and remove from heat.
Garnish with some celery and fried shallots for the extra oomph! And it is
ready to eat!
